By combining these different fragrances and flavors in this culinary ecosystem, Chef Christian Sinicropi has olfactory recreated the unique, natural atmosphere of a sheepfold and its pastures.
In a sheepfold and its pastures, traditional fragrance notes are usually associated with natural, rustic aromas. Here are some of the olfactory notes found in this environment:
1. Animal notes. Scents of wool, leather and sometimes musk evoke the presence of animals such as sheep and goats.
2. Herbaceous notes: The fresh scent of freshly cut grass, wild plants and field flowers can contribute to an aromatic atmosphere.
3. Woody notes: Woody notes can come from the barns, wooden fences, posts or wooden buildings that often make up a sheepfold.
4. Hay notes: The distinct smell of hay, dried in the sun to serve as animal feed, is a characteristic odor of pastures and farms.
